Liquid Inspiration: Tom Collins Attacked By Bees
Even your muse needs refreshment.

I've been experimenting with Collective Arts Rhubarb & Hibiscus Gin, doing basic cocktails to see what best showcases the flowery and vegetal flavors. For the record, I thoroughly enjoyed a mean martini with this and Gallo Dry Vermouth.
On my short list of classic cocktails for the occasion were the 'Bee's Knees' and a 'Tom Collins'. Seeing the two were about 90% similar, I made one and turned it into the other. Hence, 'Tom Collins Attacked By Bees'.
My Take:
2 oz Gin
3/4 oz Lemon Juice
3/4 oz Honey Syrup
Soda Water
Garnish with a Lemon Slice
Shake the gin, lemon, and honey syrup with ice and top with Soda Water.
To make the honey syrup, take a 1/4 oz of honey in a shot glass and stir in 1/2 oz water until fully incorporated.
Delightful during the summer.
